Asian-style prawn, peach and mountain rice salad

SunRice Mountain Blend of brown, red, and black rice sets the stage for a delicious Asian prawn salad.
Ingredients:
  • 30.00 ml rice vinegar
  • 30.00 gm caster sugar
  • 10.50 gm soy sauce
  • 1 tsp sesame oil
  • 60ml olive oil
  • 400g rice
  • 1 long red chilli, seeds removed, finely chopped
  • 1 Lebanese cucumber, halved lengthways, seeds removed, thinly sliced on an angle
  • 4 spring onions, thinly sliced on an angle
  • 1 bunch coriander, leaves picked
  • 2 peaches, peeled, stones removed, sliced
  • 20 cooked prawns, peeled (tails intact), deveined
Instructions:
  • Combine vinegar, sugar, soy sauce, and oils in a bowl and whisk until sugar is fully dissolved.
  • Prepare the rice as directed on the package, then cool it slightly by rinsing it under cold water. Drain well and transfer to a bowl. Add the rest of the ingredients along with the dressing, and mix everything together.
