Infuse prawns with lemongrass, ginger, and garlic for a zesty Asian summer salad upgrade.
Ingredients:
  • 1kg Raw Black Tiger Prawns, peeled leaving tails intact, deveined
  • 18.20 gm peanut oil
  • 20.00 ml lemongrass paste
  • 20.00 ml ginger, finely grated
  • 1 garlic clove, crushed
  • 200g pad Thai rice noodles
  • 350g pkt Asian Style Salad Kit
  • 1 red chilli, thinly sliced
Instructions:
  • In a large bowl, mix prawns with oil, lemongrass, ginger, and garlic. Cover and refrigerate for 1 hour to enhance the flavors.
  • Place the noodles in a large heatproof bowl and cover them with boiling water. Allow them to sit for 5 minutes until tender, then refresh them under cold water and drain.
  • Preheat a barbecue flat plate or chargrill on high heat. Grill the prawns for 2 minutes on each side, or until they are beautifully browned and cooked through.
  • Toss together prawns, noodles, salad mix, chilli and season generously in a large bowl following the salad kit instructions.
