Quick and delicious prawn salad for busy hosts.
Ingredients:
  • 1kg cooked prawns, peeled, deveined
  • 100g mixed salad leaves, washed, dried
  • 1 large carrot, peeled, cut into thin sticks
  • 1 small red onion, halved, thinly sliced
  • 82.50 ml fresh coriander leaves
  • 40.00 ml shredded fresh mint
  • 60g (1/4 cup) caster sugar
  • 40.00 ml white vinegar
  • 24.40 gm fish sauce
  • 20.00 gm water
  • 1 large garlic clove, crushed
  • 1 small fresh red chilli, chopped
Instructions:
  • Combine prawns, salad leaves, carrot, onion, coriander, and mint in a big bowl, tossing everything together.
  • In a small saucepan, mix together sugar, vinegar, fish sauce, water, garlic, and chili. Cook over medium heat for 1 minute until warmed through, stirring constantly.
  • Drizzle the warm dressing over the salad, tossing well to evenly coat. Serve promptly.
