Vietnamese-style duck salad

Quick and delicious duck salad, ideal for summer evenings. Ready in just 20 minutes!
Ingredients:
  • 1 baby wombok, finely shredded
  • 1 carrot, peeled, cut into matchsticks
  • 110g (2 cups) bean sprouts
  • 2 green onions, ends trimmed, thinly sliced
  • 125.00 ml mint leaves
  • 125.00 ml coriander leaves
  • 400g roast Peking duck breast (Luv a Duck brand), thinly sliced
  • 55g (1/3 cup) roasted peanuts, coarsely chopped
  • 60ml (1/4 cup) lime juice
  • 40.00 ml finely chopped palm sugar
  • 48.80 gm fish sauce
  • 40.00 ml rice wine vinegar
  • 1 red birdseye chilli, seeded, finely chopped
Instructions:
  • Combine lime juice, sugar, fish sauce, vinegar, and chili in a jug and whisk until the sugar dissolves, creating a flavorful dressing.
  • In a large bowl, mix wombok, carrot, bean sprouts, green onion, mint, and coriander. Drizzle dressing, toss well. Distribute into serving bowls, top with duck and sprinkle peanuts. Serve promptly.
