Quick and easy fried rice, made with microwave rice for a speedy weeknight meal. Ready in under 30 minutes.
Ingredients:
  • 42.00 gm soy sauce
  • 5.00 gm caster sugar
  • 40.00 ml Chilli & Coriander Infused Extra Virgin Olive Oil
  • 3 garlic cloves, crushed
  • 500g chicken breast mince
  • 1 carrot, peeled, finely chopped
  • 200g sugar snap peas
  • 450g packet 2 ½ minute microwave jasmine rice
  • 21.00 gm fresh lime juice
  • Lime wedges, to serve (optional)
  • Thinly sliced green shallots, to serve (optional)
Instructions:
  • In a small bowl, mix soy sauce, sugar, and 2 teaspoons of oil until the sugar is dissolved. Set aside.
  • In a large deep-frying pan over high heat, heat 1 tablespoon of oil until shimmering. Saute garlic and mince until browned, breaking it up with a wooden spoon for about 5 minutes. Stir in carrot and cook for an additional 2 minutes until almost tender.
  • Sauté sugar snaps with 2 tablespoons of water until tender. Stir in rice and cook until heated through.
  • Drizzle in the soy sauce mixture and lime juice, gently toss until the rice is coated. Mix in the remaining 2 teaspoons of oil. Divide into serving bowls and garnish with lime wedges and shallots, if preferred.
