Elevate your fresh catch with aromatic Asian herbs for a truly sensational fish dinner.
Ingredients:
  • 2 whole fish, about 450g each (see note)
  • 40.00 ml vegetable or sunflower oil
  • 12.00 gm sesame seeds
  • 2cm piece ginger, peeled, cut into wafer- thin strips
  • 1 red chilli, seeds removed, cut into thin strips
  • 80ml soy sauce
  • 20.00 ml white wine vinegar
  • 2 shallots (spring onions), sliced diagonally, to garnish
  • 250g Uncle Ben's® Microwave Brown Rice, heated following packet instructions, to serve
Instructions:
  • Preheat the oven to 220 degrees Celsius.
  • Prepare the fish by cleaning and scaling it, then make 2 slashes in the thickest part of the flesh. Brush a roasting pan with 1 tablespoon of oil and place the fish in it. Brush the flesh with the remaining oil, season with salt and pepper, and sprinkle with sesame seeds. Bake for 20-25 minutes, or until the fish is fully cooked (the flesh should flake easily when tested with a fork).
  • In a pan, combine ginger, chilli, soy sauce, vinegar, and 2 tablespoons of water. Cook over low heat until ginger and chilli soften. Pour the Asian-style dressing over the fish on a large plate. Garnish with shallots and serve with rice.
