Chilli soy fish with egg noodles

Moist and flavorful Asian-style spicy fish fillets steamed in foil packs in the oven.
Ingredients:
  • 65.63 gm salt-reduced soy sauce
  • 44.00 gm sweet chilli sauce
  • 42.00 gm lime juice
  • 3cm piece fresh ginger, peeled, cut into thin matchsticks
  • 1 garlic clove, crushed
  • 4 (250g each) white fish fillets (such as blue-eye or ling)
  • 2 green onions, finely shredded
  • 440g fresh egg noodles
  • Steamed broccolini, to serve
Instructions:
  • Preheat your oven to 200°C. Mix soy sauce, sweet chilli sauce, lime juice, ginger, and garlic in a bowl.
  • Lay out four 30cm pieces of foil on the workbench. Put 1 fish fillet on each foil piece, sprinkle with green onions, and drizzle 2 tablespoons of sauce mixture over each fillet. Fold the foil to create parcels, then transfer them to a baking tray. Bake in the oven for 10 to 15 minutes until the fish is cooked through.
  • While the noodles are cooking according to package instructions, transfer them to individual plates. Place the fish on top of the noodles and drizzle with the flavorful juices from the cooking parcels. Serve alongside the broccolini.
