Elevate your weeknight dining with this quick and flavorful meal, ready in 30 minutes.
Ingredients:
  • 2 x 85g pkts mi goreng instant noodles
  • 6 Free Range Eggs
  • 3 spring onions, finely chopped
  • 500g Cook with Curtis Chinese Recipe Pork Mince
  • 56.00 gm massaman curry paste
  • 28.60 gm Pure Australian Honey
  • 20.00 ml finely grated ginger
  • 20.00 ml kecap manis
  • 82.50 ml coriander leaves
  • Sliced red chilli, to serve (optional)
  • Lime wedges, to serve
  • Mixed salad leaves, to serve
Instructions:
  • 1. Preheat your oven to 180°C. Grease and line a 16cm x 26cm slice pan with baking paper. Place noodles in a large heatproof bowl and cover with boiling water. Allow them to sit for 2 minutes until tender.
  • In a large bowl, vigorously beat the eggs with 1/4 cup (60ml) water. Stir in the dry seasoning and fried onion from the noodle packets. Add the drained noodles and half of the spring onion, then mix everything well. Transfer the mixture to the pan and bake for 20 minutes until golden and cooked through.
  • Heat a wok or large non-stick frying pan over high heat. Pour in the oil from the noodle packets. Add the minced meat, curry paste, honey, ginger, kecap manis, and 2 tablespoons of water. Stir with a wooden spoon for 5-6 minutes until the meat is cooked and the sauce thickens.
  • Cut the noodle frittata into pieces and arrange on serving plates. Spoon the flavorful mince mixture generously over the frittata. Garnish with fresh coriander, spicy chilli if desired, and the remaining spring onion. Accompany with lime wedges and a side of salad leaves for a delightful meal presentation.
