Chicken-noodle frittata

Easy and delicious frittata with only four budget-friendly ingredients, perfect for kids!
Ingredients:
  • 1 x 75g packet 99% fat-free 2-minute noodles (chicken flavour)
  • 55g (1/3 cup) frozen peas
  • 4.60 gm olive oil
  • 3 eggs, lightly whisked
Instructions:
  • Crush the 2-minute noodles into 3cm pieces and place them in a heatproof bowl along with the flavor sachet and frozen peas. Pour boiling water over the mixture and let it sit for 2 minutes until tender. Drain the noodles. Preheat the grill on medium heat and warm olive oil in a 20cm non-stick frying pan. Add the noodle mixture to the pan and pour in lightly whisked eggs. Cook for about 3 minutes until the edges are set but the center is still slightly runny. Transfer the pan to the grill and cook for another 3 minutes until fully set. Serve by cutting the dish into quarters.
