Ingredients:
  • 125g vermicelli noodles
  • 40ml (2 tbsp) peanut oil
  • 2 garlic cloves, crushed
  • 20.00 ml fresh grated ginger
  • 4 shallots, sliced on diagonal
  • 1 small carrot, peeled, grated
  • 1 small red capsicum, thinly sliced
  • 2 x 170g cans crabmeat, drained
  • 250.00 ml bean sprouts, trimmed
  • 8 eggs
  • 125.00 ml fresh coriander leaves
  • Plum sauce, to serve
Instructions:
  • Place the vermicelli in a bowl of hot water and let it soak for 5 minutes. Then, drain and set aside.
  • In a non-stick pan over medium heat, sizzle garlic and ginger in half the oil for 30 seconds. Mix in shallots, carrot, and capsicum; sauté for 2 minutes. Combine with crabmeat, sprouts, and noodles in a bowl.
  • Whisk the eggs with seasoning and combine with vegetables and noodles. Mix in the coriander. Heat the rest of the oil in a non-stick pan over low heat. Pour in the frittata mixture and cook, partly covered, for 15 minutes until set.
  • Finish cooking under a hot grill, then let it rest for 5 minutes before serving with the plum sauce.
