Try our speedy 2-minute noodle veggie frittatas with a pie maker for a nutritious lunchbox treat!
Ingredients:
  • 2 x 72g packets chicken-flavoured 2-minute noodles
  • 6 eggs
  • 1 large carrot, coarsely grated
  • 1 green onion, thinly sliced
  • 375.00 ml frozen peas, corn and capsicum
  • 187.50 ml grated tasty cheese
Instructions:
  • Prepare noodles as per package instructions, setting aside seasoning packets. Drain thoroughly and allow to cool for 15 minutes. Using scissors, cut noodles into 12cm pieces.
  • In a large bowl, gently whisk together the eggs. Fold in noodles, carrot, onion, vegetable mix, cheese, and one seasoning sachet (discard the extra sachet). Mix until evenly blended.
  • Preheat the pie maker. Spoon 1/4 cup of mixture into each hole, close the lid, and cook for 10 minutes until golden and set. Transfer to a wire rack to cool. Repeat with the remaining noodle mixture to make 12 frittatas. Serve.
