Make quick and tasty Singapore noodles with chicken for a cozy night in.
Ingredients:
  • 350g pkt Singapore noodles
  • 20.00 ml sesame oil
  • 500g Australian chicken breast stir-fry
  • 1 brown onion, thinly sliced
  • 400g pkt Shredded Vegetable Stir Fry
  • 2 garlic cloves, crushed
  • 10.00 gm curry powder
  • 1 bunch pak choy, chopped
  • 48.80 gm oyster sauce
  • 1 long red chilli, thinly sliced (optional)
Instructions:
  • Cook the noodles according to the instructions on the packet, then drain them thoroughly.
  • In a wok or large deep frying pan, heat 2 tsp of oil over medium-high heat. Stir-fry the chicken until browned, about 3-4 minutes. Transfer to a plate.
  • Heat the rest of the oil in a wok or pan over medium-high heat. Stir in the onion and cook until softened, about 2-3 minutes. Toss in the vegetables and cook for 1 minute. Mix in the garlic and curry powder, stir until fragrant, about 1 minute.
  • Add the chicken back to the wok or pan along with the noodles, pak choy, oyster sauce, and ¼ cup (60ml) hot water. Stir-fry for 2-3 mins until everything is well combined and the chicken is fully cooked.
  • Ladle the noodle mixture into individual serving bowls and garnish with chili, if desired.
