Whip up a quick and delicious chicken noodle salad in 20 minutes with Singapore noodles and hot roast chicken from Coles.
Ingredients:
  • 400g pkt shelf-fresh Singapore noodles
  • 60ml lime juice
  • 36.40 gm peanut oil
  • 22.00 gm sweet chilli sauce
  • 6.10 gm fish sauce
  • 41.60 gm peanut butter
  • 1 Hot Roast Chicken, bones removed, meat sliced
  • 1 carrot, peeled, cut into long matchsticks
  • 1/4 red cabbage, finely shredded
  • 3 spring onions, thinly sliced diagonally
Instructions:
  • Cook the noodles according to the instructions on the packet and then make sure to drain them thoroughly.
  • Combine lime juice, oil, sweet chilli sauce, fish sauce, peanut butter, and 1 tablespoon of water in a screw-top jar. Shake well to mix thoroughly.
  • In a large bowl, mix together the chicken, noodles, carrot, cabbage, and spring onion. Drizzle half of the dressing over the ingredients and toss to ensure everything is coated. Serve on plates and drizzle with the remaining dressing.
