Asian chicken noodle salad

Create a simple and delicious chicken noodle salad with just 6 ingredients!
Ingredients:
  • 4 uncooked hoisin marinated chicken sticks
  • 200g Thai-style dried rice noodles
  • 1 red capsicum, thinly sliced
  • 1 Lebanese cucumber, halved, sliced
  • 82.50 ml fresh coriander leaves
  • 42.40 gm oriental salad dressing
Instructions:
  • Heat a barbecue plate or chargrill pan on medium-high. Grill chicken for 6 to 8 minutes until browned and cooked through. Rest covered in foil for 5 minutes, then slice thickly. Enjoy!
  • Place the noodles in a heatproof bowl and cover them with boiling water. Let them stand for 6 to 7 minutes until tender. Drain and rinse under cold water, then transfer to a large bowl.
  • Combine the chicken, capsicum, cucumber, coriander, and dressing with the noodles. Season with salt and pepper, toss well, and serve.
