20-minute Asian chicken noodle salad with mango and sweet chilli dressing - a delicious and easy one-bowl meal!
Ingredients:
  • 8 chicken tenderloins
  • 440g packet fresh hokkien noodles
  • 60ml (1/4 cup) sweet chilli sauce, plus extra (optional), to serve
  • 80ml (1/3 cup) fresh lime juice
  • 18.20 gm peanut oil
  • 2 mangoes, cheeks removed, thinly sliced
  • 1 red capsicum, deseeded, very thinly sliced
  • 3 green shallots, thinly sliced
  • 1 bunch fresh mint, leaves picked
  • 50g snow pea sprouts
  • 45g (1/4 cup) cashews, coarsely chopped
  • Lime wedges, to serve (optional)
Instructions:
  • Preheat a sizzling chargrill pan or barbecue grill plate on high heat. Grill the chicken for 4 minutes on each side until perfectly cooked. Place it on a plate to cool briefly, then slice into 3cm pieces. Enjoy!
  • Place the noodles in a large heatproof bowl and cover with boiling water. Let it sit for 2 minutes, then separate the noodles using a chopstick or fork. Drain thoroughly before using.
  • In a screw-top jar, mix together sweet chilli sauce, lime juice, and peanut oil. Shake vigorously until well combined.
  • Place the noodles in a spacious bowl and generously drizzle with half of the dressing. Gently toss until coated. Mix in the chicken, mango, capsicum, shallot, mint, and sprouts. Drizzle with the remaining dressing and toss to blend. Top with cashews and serve with lime wedges and extra sweet chili sauce, as desired.
