Zesty Thai noodle salad with chicken, mango, and greens.
Ingredients:
  • 100g Thai-style rice noodles
  • 100g classic salad
  • 1 small red onion, halved, thinly sliced
  • 128.75 gm Italian dressing
  • 1 barbecued chicken
  • 2 mangoes, peeled, sliced
Instructions:
  • In a large heatproof bowl, place the noodles. Pour boiling water over them and allow to soak for 15 minutes until tender. Drain the noodles, rinse with cold water, and drain again before returning them to the bowl.
  • Remove the chicken from the carcass, shred it, and combine with the noodles and remaining ingredients. Toss everything together to mix well, then transfer the salad to serving bowls.
