Warm chicken & mango salad with passionfruit dressing

Create a colorful chicken salad bursting with fresh seasonal fruits.
Ingredients:
  • Olive oil, to grease
  • 3 large RSPCA approved chicken breast fillets
  • 120g Australian 4 leaf blend
  • 2 mangoes, flesh thinly sliced
  • 1 large red capsicum, thinly sliced
  • 1/4 small red onion, thinly sliced
  • 82.50 ml fresh passionfruit pulp
  • 10.60 gm lime juice
  • 36.40 gm extra virgin olive oil
  • 1 small fresh red chilli, thinly sliced
  • 1 large avocado, flesh coarsely chopped
Instructions:
  • Preheat a barbecue plate or char-grill over medium heat, then brush with oil. Cook the chicken for 5 minutes on each side, or until fully cooked.
  • Arrange the salad leaves, mango, capsicum, and onion elegantly on a large serving platter. Sprinkle with salt and pepper to taste. In a small bowl, mix the passionfruit pulp, oil, and chili to create a delicious dressing.
  • Slice the chicken thickly and layer on top of the salad. Sprinkle with avocado and drizzle on the dressing.
