Whip up a quick and delicious pasta salad in under 20 minutes for a hearty twist on your regular salad.
Ingredients:
  • 375g dried rigatoni pasta
  • 56.88 gm olive oil
  • 500g chicken breast fillets, trimmed
  • 1 medium brown onion, thinly sliced
  • 1 garlic clove, crushed
  • 200g semi-dried tomatoes, drained, chopped
  • 1/2 tsp dried chilli flakes
  • 300ml pure cream
  • 50g baby rocket
Instructions:
  • Boil pasta in a large saucepan of salted water according to package instructions until al dente. Drain well.
  • Begin by heating 1 tablespoon of oil in a large non-stick frying pan over medium heat. Add the chicken and cook for 5 minutes on each side until fully cooked. Remove from the pan, cover, and let it rest for 5 minutes before thinly slicing.
  • In a pan on medium heat, heat the remaining oil. Add the onion and cook for 3 to 5 minutes until softened, stirring occasionally. Stir in the garlic, tomatoes, and chili and cook for 1 more minute until fragrant.
  • Pour in the cream and simmer gently, stirring occasionally, until the mixture thickens, about 3 to 5 minutes.
  • Combine pasta, chicken, rocket, and onion mixture in a bowl. Toss together and serve.
