30-minute chicken and pasta salad - a quick and delicious midweek meal!
Ingredients:
  • 89.38 gm honey
  • 3 garlic cloves, crushed
  • 73.13 gm wholegrain mustard
  • 36.40 gm olive oil
  • 800g chicken wing drumettes
  • 250.00 ml dried risoni pasta
  • 100g green beans, cut into 2cm lengths
  • 1.25 gm caster sugar
  • 60g chargrilled red capsicum, chopped
  • 125g can corn kernels, drained, rinsed
  • 20.00 ml chopped fresh chives
  • Salad leaves, to serve
Instructions:
  • Preheat the oven to 220°C/200°C fan-forced and line a large baking tray with baking paper. In a bowl, mix honey, garlic, 2 tablespoons of mustard, and half of the oil. Toss the chicken in the bowl with half of the honey mixture until well coated.
  • Lay the chicken on the baking tray. Bake for 25-30 minutes, rotating and brushing with the leftover honey mixture halfway through, until beautifully golden and fully cooked.
  • Cook pasta in a saucepan of boiling, salted water according to package instructions until tender. Add beans during the last 3 minutes of cooking. Drain well.
  • In a bowl, combine lemon juice, sugar, remaining mustard, and remaining oil. In a large bowl, mix pasta mixture with capsicum, corn, and chives. Pour in the lemon juice mixture and stir everything together until well combined.
  • Present the chicken alongside a comforting warm pasta salad and fresh salad leaves.
