Whip up a speedy and delicious meal with these quick chicken drumettes.
Ingredients:
  • 106.43 gm plum sauce
  • 2 garlic cloves, crushed
  • 36.60 gm worcestershire sauce
  • 1kg chicken drumettes
  • 4 corn cobs, husks and silk removed
  • Olive oil cooking spray
  • 250g cherry tomatoes, quartered
  • 60g baby rocket
  • 42.00 gm lemon juice
  • 18.20 gm olive oil
Instructions:
  • Preheat the oven to 200C/180C fan-forced and prepare a large baking tray lined with baking paper.
  • In a large bowl, mix plum sauce, garlic, worcestershire sauce, and 1 tablespoon of cold water. Add the chicken and toss until well coated. Transfer to a prepared tray and bake for 25 minutes, or until the chicken is browned and fully cooked.
  • For the Grilled Corn and Rocket Salad, start by preheating a barbecue chargrill on high heat. Lightly spray the corn with oil and grill, turning occasionally, for 6 to 8 minutes until browned and tender. Transfer the grilled corn to a cutting board, let it cool for 5 minutes, then use a sharp knife to cut the kernels off the cobs into a bowl. Add in the tomato, rocket, lemon juice, and oil. Season with salt and pepper, then toss everything together to combine. Enjoy!
