Irresistible sticky chicken drumsticks with rice, avocado, and corn. Kids will be begging for seconds!
Ingredients:
  • 1kg chicken drumsticks and/or drumettes (see note)
  • 125ml honey
  • 80ml soy sauce
  • 20.00 ml finely grated fresh ginger
  • 2 garlic cloves, crushed
  • 12.00 gm sesame seeds
  • 1 corn cob, husks and silks removed
  • 220g brown rice
  • 1 red capsicum, seeded, finely chopped
  • 1 ripe avocado, halved, stoned, peeled, finely chopped
  • 42.00 gm lime juice
  • 62.50 ml finely chopped chives
Instructions:
  • Preheat your oven to 180°C. Line a roasting pan with baking paper. Make 3cm-long cuts on each drumstick with a small, sharp knife. In a jug, mix honey, soy sauce, ginger, garlic, and sesame seeds. Place the chicken in the roasting pan and pour the honey mixture over it, ensuring all pieces are coated. Bake in the preheated oven for 30 minutes, turning the chicken occasionally until it's cooked through and sticky. Remove from the oven and enjoy your delicious dish!
  • Using a sharp knife, cut the corn kernels off the cob and set aside. Boil rice in a large saucepan for 20 minutes until tender. Add corn and cook for 1 minute, then refresh in cold water and drain well. Combine rice with capsicum, avocado, lime juice, chives, salt, and pepper in a bowl and gently toss to mix.
  • Divide the rice salad onto serving plates, place the drumsticks on top, and serve promptly.
