Indulge in succulent sweet sticky drumsticks with broccolini and rice - a crowd pleaser!
Ingredients:
  • 8 (about 1.2kg) chicken drumsticks
  • 125ml (1/2 cup) honey
  • 60ml (1/4 cup) red wine vinegar
  • 23.40 gm wholegrain mustard
  • 10.00 gm sweet paprika
  • 20.00 ml finely chopped fresh oregano
  • 12.00 gm sesame seeds
  • Salt & freshly ground black pepper
  • 9.20 gm vegetable oil
  • 40g (1/4 cup) slivered almonds
  • 2 bunches broccolini, ends trimmed, diagonally cut into 4cm lengths
  • 21.00 gm thick soya sauce
  • Steamed Basmati rice, to serve
Instructions:
  • Score each chicken drumstick with three 3cm long and 1cm deep cuts using a sharp knife. In a large bowl, mix honey, vinegar, mustard, garlic, paprika, oregano, and sesame seeds. Add chicken and toss gently until coated. Cover with plastic wrap and chill in the fridge for 4 hours to enhance the flavors.
  • Preheat the oven to 200°C. Arrange the chicken in a roasting pan and generously coat with the flavorful marinade. Season with salt and pepper. Roast in the oven, turning occasionally, for about 45 minutes until beautifully golden and cooked to perfection.
  • Heat oil in a large frying pan over high heat. Toast almonds for 1 minute until golden. Transfer almonds to a plate using a slotted spoon. Cook broccolini for 2 minutes until bright green and tender. Add soy sauce and almonds, toss gently for 1 more minute until heated through.
  • Divide the steamed rice onto plates. Arrange the chicken and broccolini mixture on top and serve promptly.
