Sticky chicken drumsticks paired with sautéed kalettes and fluffy steamed rice.
Ingredients:
  • 8 Chicken Drumsticks Large Pack (see notes)
  • 55g brown sugar
  • 60ml fish sauce
  • 30.00 ml white vinegar
  • 2 garlic cloves finely chopped
  • 36.80 gm canola oil divided
  • 160g kalettes halved lengthwise
  • 120g onion
  • 1 long red chilli thinly sliced into rings
  • 800.00 gm steamed rice for serving
Instructions:
  • Preheat your oven to a toasty 250C (230C for fan-forced). Get a large heavy baking tray ready with a rack on it.
  • Whisk together sugar, fish sauce, vinegar, and garlic in a small bowl to create a flavorful marinade. Set the fish sauce mixture aside for later use.
  • Score the skin and flesh of the chicken with a sharp knife. Coat the chicken with a flavorful mixture of 1 tablespoon of oil and 1 tablespoon of fish sauce. Place the chicken on a rack on a baking tray and season it with salt and pepper. Roast for 25 minutes or until the chicken is crispy on the outside and fully cooked.
  • Heat a wok or large heavy frying pan over high heat until smoking. Add 1 tablespoon of oil, then quickly add kalettes and stir-fry for 1 minute. Throw in onion and chili and continue to stir-fry for 2 minutes until vegetables are crisp-tender. Pour in the fish sauce mixture, cook for 30 seconds until slightly reduced. Serve right away with chicken and rice.
