Easy and affordable oven-roasted chicken with zesty lemon, garlic, and parsley.
Ingredients:
  • 12 chicken drumsticks (see note)
  • 60g butter, melted
  • 125.00 ml flat-leaf parsley leaves, finely chopped
  • 1 lemon, rind finely grated, juiced
  • 3 garlic cloves, crushed
Instructions:
  • Preheat the oven to 200°C while you place the drumsticks in a lightly greased shallow roasting dish.
  • Mix oil and 1 tablespoon of butter together, then generously drizzle over drumsticks. Season with salt and pepper, ensuring each piece is evenly coated.
  • Roast drumsticks until golden brown and fully cooked, typically 35-40 minutes. Take out of the oven.
  • In a bowl, mix together the remaining butter, parsley, lemon rind, 1/4 cup lemon juice, and garlic. Spoon the mixture over the chicken, cover, and let it stand for 10 minutes before serving. Enjoy!
