Decadent wine-infused sticky chicken paired with fluffy mash that serves four for under $10.
Ingredients:
  • 125ml (1/2 cup) white wine
  • 60ml (1/4 cup) fresh lemon juice
  • 60ml (1/4 cup) honey
  • 8 chicken drumsticks
  • 18.20 gm olive oil
  • 600g potatoes, peeled, coarsely chopped
  • 80ml (1/3 cup) milk, warmed
  • 23.40 gm wholegrain mustard (see note)
Instructions:
  • In a shallow glass or ceramic bowl, mix together wine, lemon juice, honey, and garlic. Add the chicken and coat it well. Let it marinate for 10 minutes.
  • Preheat your oven to 180°C. Remove the chicken from the marinade and lay it out on a large baking tray. Drizzle with oil and season generously with salt and pepper. Roast for 35-40 minutes until golden and fully cooked.
  • Cook the potato in a large saucepan of salted boiling water for 12-15 minutes until tender. Drain and mash it in the pan with milk until smooth. Stir in mustard and season with salt. Cover to keep warm.
  • In a small saucepan over medium heat, combine the leftover wine, lemon juice, and honey. Cook until the mixture thickens slightly, about 4-5 minutes.
  • Plate the mashed potatoes and chicken, then generously drizzle the sauce on top before serving.
