Flavorful grilled rosemary chicken with garlic, Dijon mustard, and lemon marinade.
Ingredients:
  • 8 cloves garlic, minced
  • 3 tablespoons olive oil
  • 2 tablespoons minced fresh rosemary
  • 1.5 tablespoons Dijon mustard
  • 1.5 tablespoons lemon juice
  • 0.25 teaspoon ground black pepper
  • 0.125 teaspoon kosher salt
  • 4 boneless, skinless chicken breast halves
Instructions:
  • Combine minced garlic, fragrant olive oil, fresh rosemary, tangy mustard, zesty lemon juice, flavorful pepper, and sea salt in a bowl. Set aside 2 tablespoons for basting.
  • Add the chicken breasts to a resealable plastic bag and coat them with the leftover garlic mixture. Seal the bag, massage the marinade into the chicken, and allow it to marinate at room temperature for 30 minutes.
  • Heat up your outdoor grill until it reaches a medium-high temperature, then lightly oil the grate.
  • Take out the chicken from the marinade and gently shake off any extra marinade, then dispose of the rest.
  • Grill the chicken for 4 minutes, then flip, baste with the marinade, and grill until fully cooked and juicy, about 5 more minutes. Ensure it reaches an internal temperature of at least 165 degrees F (74 degrees C).
  • Place the chicken on a plate and tent it with foil. Allow it to rest for a minimum of 2 minutes before serving.
