Elevate chicken with rosemary marinade and marinate overnight. Warm beans soak up mustardy dressing for next level flavor. Pair with tomatoes for a delicious 5-a-day dish!
Ingredients:
  • 1 sprig rosemary
  • half lemon
  • 2 skinless chicken breasts higher-welfare
  • half teaspoon wholegrain mustard
  • 2 100g ciabatta rolls (optional)
  • 12 cherry tomatoes
  • 200g green beans
Instructions:
  • - Preheat the oven to 180ºC/350ºF/gas 4. - Crush rosemary leaves with a pinch of sea salt in a mortar and pestle. Add 2 tablespoons oil, half of the lemon zest, half of the lemon juice, and mix. - Alternatively, finely chop rosemary leaves and mix with other ingredients in a bowl. - Slice chicken breasts horizontally, flatten them, and pour the rosemary oil over them to marinate. - Mix mustard, remaining lemon juice, and double the olive oil in a large bowl. - Tear ciabatta into pieces, toss with cherry tomatoes and olive oil, season, and roast for 20 minutes until crisp. - Cook trimmed beans in boiling salted water for 5 minutes, drain, and toss in mustard dressing with roasted bread and tomatoes. - Cook chicken on a griddle or frying pan for 3 minutes on each side. - Serve with warm bean salad.
