Grilled Chicken and Tortellini with Roasted Red Pepper Cream

Quick and tasty grilled chicken and tortellini with roasted red pepper cream sauce, using convenient frozen broccoli. Ready in just 30 minutes!
Ingredients:
  • 1 (9-oz.) pkg. refrigerated cheese-filled tortellini
  • 2 cups frozen 100% broccoli florets, large pieces cut up
  • 1/3 cup drained roasted red bell peppers (from a jar)
  • 1 (10-oz.) container refrigerated Alfredo sauce
  • 1 (6-oz.) pkg. refrigerated grilled chicken breast strips
  • 2 tablespoons diced roasted red bell peppers (from a jar)
  • 2 tablespoons butter, melted
  • 1/4 cup Progresso™ Italian Style Bread Crumbs
Instructions:
  • Prepare the tortellini and broccoli according to the instructions on the tortellini package. Once cooked, drain and return them to the saucepan.
  • Puree a 1/3 cup of roasted peppers in a blender. Mix in the Alfredo sauce until well blended.
  • Combine Alfredo sauce, chicken, and 2 tablespoons roasted peppers with tortellini and broccoli in a saucepan. Cook and stir over medium heat for 2 to 3 minutes until heated through. Transfer to a shallow 1 to 1 1/2-quart casserole dish. Mix butter and bread crumbs in a small bowl, then sprinkle over the top before serving.
  • Broil until topping turns a beautiful golden brown, about 1 to 2 minutes, positioning the rack 4 to 6 inches away from the heat.
