Tasty grilled chicken fajitas with zesty lime, flavorful fajita seasoning, and caramelized bell peppers for a delicious meal.
Ingredients:
  • 2 limes, juiced
  • 2 tablespoons olive oil
  • 2 tablespoons fajita seasoning
  • 1 pound skinless, boneless chicken breast halves
  • 2 large yellow bell peppers
  • 2 large red bell peppers
  • 10 (6 inch) flour tortillas, warmed
Instructions:
  • Combine lime juice, olive oil, and fajita seasoning in a bowl. Transfer the marinade to a resealable plastic bag. Add chicken breasts, coat well, remove excess air, and seal the bag. Refrigerate for 30 minutes.
  • Heat up an outdoor grill to medium heat and gently grease the grate with oil.
  • Half the bell peppers and remove and discard the membranes and seeds.
  • Pat chicken dry and shake off any excess marinade before discarding the rest.
  • Grill the chicken and peppers cut-side down on the preheated grill until the chicken is cooked through and no longer pink in the center, juices run clear, and the peppers have beautiful grill marks, about 15 minutes. Use an instant-read thermometer to ensure the chicken reaches at least 165 degrees F (74 degrees C) in the center.
  • Slice the peppers and chicken into strips, then arrange them on top of the warm tortillas for a delicious meal.
