Try this delectable herb-infused citrus grilled chicken for a delicious dinner option.
Ingredients:
  • 1/2 cup lemon juice
  • 2 tablespoons chopped fresh or 2 teaspoons dried rosemary leaves, crumbled
  • 2 tablespoons finely chopped onion
  • 3 tablespoons vegetable oil
  • 1 teaspoon grated lemon peel
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 3 pounds chicken thighs
Instructions:
  • Combine all the ingredients in a shallow glass or plastic dish, then add the chicken, making sure to coat it evenly with the marinade. Cover and refrigerate for at least 30 minutes, but no more than 24 hours, remembering to turn the chicken occasionally.
  • Preheat your grill, whether it's charcoal or gas.
  • Take out the chicken from the marinade and set the marinade aside. Grill the chicken, skin side up, 4 to 6 inches from medium heat for 20 minutes. Flip the chicken, brush with the reserved marinade, cover, and continue grilling for 15 to 25 minutes until the chicken is cooked through.
  • Bring the marinade to a boil and simmer for 1 minute. Serve with chicken.
