Impress guests with easy garlic herb chicken and green goddess dressing at your dinner party.
Ingredients:
  • 850g RSPCA Garlic & Herb Boneless Chicken
  • Steamed peas, to serve
  • Steamed snow peas, to serve
  • Thinly sliced radish, to serve
  • Lemon halves, to serve
  • 60g baby rocket leaves or watercress sprigs
  • 125.00 ml chopped flat-leaf parsley
  • 62.50 ml chopped tarragon or 1 tbsp dried tarragon
  • 62.50 ml chopped chives
  • 2 anchovy fillets, chopped
  • 11.80 gm Dijon mustard
  • 1 garlic clove, crushed
  • 42.00 gm lemon juice
Instructions:
  • Skewer the chicken onto 2 long metal skewers, from the breasts to the thighs, and cook according to the packet instructions.
  • Make the green goddess dressing by blending rocket or watercress, parsley, tarragon, chives, anchovy, mustard, garlic, oil, and lemon juice in a food processor until smooth. Season to taste.
  • Place the chicken, peas, snow peas, radish, and lemon halves beautifully on a platter. Drizzle everything with the dressing and then cut the chicken into pieces before serving.
