Ingredients:
  • 2 pounds red potatoes, cut into bite-size pieces
  • 1 serving olive oil cooking spray
  • 0.5 pound frozen French-style green beans, thawed
  • 1 cup chopped red onion
  • 4 cloves minced garlic
  • 0.5 cup reduced-fat balsamic vinaigrette dressing
  • 1 cup jarred roasted red peppers, drained and chopped
  • 0.25 cup chopped fresh basil
  • 1 (8 ounce) package goat cheese, crumbled
Instructions:
  • In a large pot, simmer potatoes in salted water until tender. Drain and steam dry, then transfer to a large bowl.
  • 1. Preheat a large skillet over medium-high heat, then grease it with cooking spray. Add green beans and onion, cook and stir until tender, around 5 minutes. Mix in the garlic and continue to cook until fragrant, about 1 more minute.
  • Combine the green bean mixture with the potatoes in a large bowl. Mix in the balsamic vinaigrette, roasted red peppers, and basil, gently tossing everything together. Finally, fold in the goat cheese.
