Warm asparagus & bean salad

Create a zesty breadcrumb topping with garlic, lemon, and Dijon mustard for flavorful asparagus and green beans.
Ingredients:
  • 36.40 gm olive oil
  • 250.00 ml fresh breadcrumbs (day old bread)
  • 2 cloves garlic
  • 1 bunch asparagus, trimmed
  • 300g green beans, trimmed
  • 2.95 gm dijon mustard
  • 2 tsp lemon rind, finely grated
  • 18.20 gm extra virgin olive oil
Instructions:
  • In a large frying pan, warm olive oil over medium heat. Add breadcrumbs and cook for about 7 mins until golden. Toss in whole garlic cloves and lemon rind, stirring for 1 min until breadcrumbs are crisp and golden brown. Transfer to a bowl.
  • Place the asparagus and beans in a large heatproof bowl and cover with boiling water. Let them sit for 5 minutes, then drain thoroughly.
  • Combine extra virgin olive oil, juice, and mustard, whisk until well blended. Drizzle over the vegetables, season to taste, mix gently to combine. Transfer to a serving platter, sprinkle with the crumb mixture. Serve promptly.
