Warm steak salad with horseradish dressing

Light and satisfying steak salad with roasted tomatoes, asparagus, and zesty horseradish dressing.
Ingredients:
  • 6 roma tomatoes, halved
  • 1 red onion, cut into wedges
  • salt and pepper
  • olive oil
  • 1 bunch asparagus, woody ends trimmed
  • 3 beef sirloin steaks, trimmed
  • 41.60 gm buttermilk
  • 20.00 ml horseradish sauce
  • 2 tsp finely chopped chives
  • 100g baby spinach leaves
Instructions:
  • Preheat your oven to 210°C. Arrange the tomato and onion on a baking tray lined with non-stick baking paper. Season with salt and pepper, then lightly drizzle with olive oil. Roast for 15 minutes, or until soft.
  • Blanch the asparagus in boiling water for 1-2 minutes, then transfer to ice water to stop the cooking process. Drain and set aside.
  • Season the steaks generously with salt and pepper, then lightly drizzle with oil. Heat a non-stick frying pan over medium-high heat. Sear the steaks for 3 minutes on each side for a perfect medium cook or until your preferred doneness. Let the steaks rest, covered with foil, for 5 minutes before serving.
  • Mix together the buttermilk, horseradish sauce, chives, and 1/4 cup of water to create the flavorful dressing.
  • When ready to enjoy, layer fresh spinach leaves on serving plates. Slice the steak into thick pieces and place them on top of the spinach alongside the tomatoes, onion, and asparagus. Finally, generously drizzle everything with the dressing and serve promptly.
