Elevate your meal with an Italian-inspired gourmet salad featuring sausage, artichokes, and asparagus.
Ingredients:
  • 600g sausage
  • 1 bunch asparagus, trimmed, halved
  • 1 small cos lettuce, leaves separated, washed, dried
  • 3 egg tomatoes, quartered lengthwise
  • 150g artichoke hearts marinated in oil, quartered
  • 25g parmesan, coarsely grated
  • Ground black pepper, to taste
  • 4 crusty bread rolls, to serve
Instructions:
  • Preheat a heavy frying pan or chargrill pan over medium-high heat and cook the sausages, turning occasionally, for 10 minutes or until done.
  • Cook the asparagus in a saucepan of gently simmering water for 2-3 minutes until tender, then drain.
  • Rip the lettuce leaves in half and add them to a large bowl. Take the sausages out of the pan once they are cooked and set them aside to keep warm.
  • Place the tomatoes in the pan and sear over medium-high heat, flipping once, for 1 minute.
  • Combine the flavorful combination of cooked tomatoes, asparagus, artichokes, and Parmesan with the crisp lettuce.
  • Slice the sausages diagonally, add them to the salad, drizzle with olive oil, toss gently, sprinkle with pepper, and enjoy with bread rolls.
