Quick and simple gluten-free sausage pasta recipe from taste.com.au and Heinz.
Ingredients:
  • 18.20 gm extra virgin olive oil, plus 18.20 gm extra
  • 400g gluten free Italian pork sausages
  • 1 large zucchini, trimmed, diced
  • 1 large yellow or red capsicum, seeded, diced
  • 200g grape tomatoes, halved
  • 340g Gluten Free Fusilli
  • 40g (1/3 cup) pitted Kalamata olives, sliced
  • 20.00 ml baby salted capers, rinsed, drained, chopped
  • 75g Danish feta cheese, crumbled
  • 40.00 ml chopped fresh chives
  • 40.00 ml chopped fresh flat-leaf parsley
Instructions:
  • In a large non-stick pan over medium heat, fry sausages in 1 teaspoon of oil, turning occasionally for 8-10 minutes until golden and fully cooked. Place on paper towel-lined plate to slightly cool before slicing diagonally into 1cm thick pieces.
  • Clean the pan, then heat it over medium-high heat and add the rest of the oil. Cook the zucchini and capsicum, stirring occasionally, for about 2 minutes or until they are just softened. Transfer them to a large bowl.
  • Cook the pasta in a large pot of salted boiling water following package directions until al dente. Quickly rinse pasta under cold water and drain thoroughly.
  • Combine the pasta, sausage, tomatoes, olives, capers, feta, and herbs with the zucchini in a bowl. Whisk the extra olive oil and balsamic vinegar together, then pour over the salad and gently mix. Season with sea salt and freshly ground black pepper.
