Warm mushroom pasta salad

Elevate your meal with a savory mushroom pasta salad, ideal alongside grilled sausages or ham.
Ingredients:
  • 250g dried large shell pasta
  • 27.30 gm olive oil
  • 400g button mushrooms, thinly sliced
  • 3 green onions, thinly sliced
  • 2 garlic cloves, crushed
  • 2 celery stalks, trimmed, finely chopped
  • 1 small red capsicum, finely chopped
  • 42.00 gm lemon juice
  • 23.40 gm wholegrain mustard
  • 40.00 ml chopped fresh flat-leaf parsley leaves
Instructions:
  • Boil pasta in a large pot of salted water following package instructions until tender. Drain and return to the pot.
  • Heat 2 teaspoons of oil in a frying pan over medium-high heat. Cook mushrooms until just tender, then add onion, garlic, celery, and capsicum. Stir and cook until heated through.
  • Combine mushroom mixture with pasta. Whisk the remaining oil, lemon juice, and mustard in a jug, then add it to the pasta mixture along with parsley. Mix everything together and serve.
