Ingredients:
  • 1 lemon, rind finely grated, juiced
  • 4 (170g each) chicken breast fillets, trimmed
  • 250.00 ml dried risoni pasta
  • 350g button mushrooms, thinly sliced
  • 82.50 ml finely chopped fresh flat-leaf parsley leaves
Instructions:
  • In a shallow ceramic dish, combine garlic, lemon juice, and half of the oil. Add chicken, making sure to coat it evenly. Cover the dish and refrigerate for 30 minutes, if possible.
  • Boil pasta in salted water according to package instructions until al dente. Drain well.
  • Meanwhile, heat the remaining oil in a large frying pan over medium-high heat until sizzling. Sear the chicken for 5 to 6 minutes on each side until it's fully cooked. Transfer the chicken to a plate, cover, and let it rest for 5 minutes before serving.
  • - Sauté mushrooms in a pan until softened, about 4 to 5 minutes. Then, mix in pasta, 2 teaspoons of lemon zest, and parsley. Cook for an additional 2 to 3 minutes until everything is heated through. Serve the chicken with mushroom risoni salad.
