Chargrilled chicken escalopes

Summer glazed lemon honey thyme chicken with grilled zucchini and rocket - a simple and delicious meal for warm evenings.
Ingredients:
  • 36.40 gm olive oil, plus extra to drizzle
  • 57.20 gm honey, warmed
  • 20.00 ml thyme leaves
  • Zest and juice of 1 lemon
  • 4 x 180g chicken breast fillets
  • 2 zucchini, thinly sliced lengthways
  • 100g rocket leaves
  • Crusty bread, to serve
  • Extra lemon wedges, to serve
Instructions:
  • Preheat a chargrill or barbecue on high heat. Mix oil, honey, thyme, and lemon zest in a bowl, then season with salt and pepper.
  • Cut each chicken breast diagonally into 3 thin slices. Brush honey mixture over chicken and zucchini. Sear chicken for 2 minutes on each side until slightly charred and cooked through. Set aside to rest. Sear zucchini for 1 1/2 minutes on each side until slightly charred and tender.
  • Combine rocket and zucchini in a bowl, then drizzle with lemon juice and extra oil before tossing together.
  • Present the zucchini salad with chicken on top, accompanied by a side of crusty bread.
