Chargrilled chicken fillets on red rice

Simply delicious meal for two, ready in minutes.
Ingredients:
  • 2 chicken breast fillets
  • olive oil spray
  • 250g packet basmati rice
  • 425g can chopped Roma tomatoes
  • 1 red chilli, deseeded, finely chopped
  • 40.00 gm basil pesto, to serve
  • parmesan cheese, to serve
Instructions:
  • Preheat a chargrill over medium-high heat. Coat chicken with olive oil and grill for 3 to 4 minutes on each side until fully cooked. Set aside to keep warm.
  • Create a 2cm opening in the rice packet, then stand it up in the microwave. Microwave on HIGH (100%) power for 2 minutes.
  • Place tomatoes in a small saucepan over medium heat and bring to a gentle boil. Reduce heat and simmer for 1 minute.
  • Transfer the warmed rice from the microwave to a bowl. Mix in the tomatoes and chili, stirring well. Slice the chicken and serve with the rice, basil pesto, and Parmesan.
