Chargrilled chicken with cucumber and coriander salsa

Crisp cucumber salsa pairs perfectly with grilled chicken.
Ingredients:
  • 500g chicken breast fillets
  • olive oil cooking spray
  • mixed salad leaves, to serve
  • 2 Lebanese cucumbers, halved, deseeded, finely diced
  • 2 large roma tomatoes, deseeded, finely diced
  • 4 green onions, finely sliced
  • 1 long green chilli, deseeded, finely chopped
  • 21.00 gm lime juice
Instructions:
  • To create a refreshing cucumber and coriander salsa, simply toss together cucumber, tomato, onion, chili, fresh coriander, and a generous splash of zesty lime juice in a bowl. Finish off with a sprinkle of salt and pepper to taste.
  • Thinly slice the chicken into escalopes. Preheat a chargrill over high heat and lightly spray with oil. Cook the chicken for 2 minutes on each side, or until fully cooked.
  • Plate the chicken evenly. Spoon the salsa over the chicken. Serve alongside fresh salad leaves.
