Buffalo chicken kebabs

Quick and flavorful chicken kebabs with spicy homemade tomato sauce, ready in just 30 minutes on a chargrill pan.
Ingredients:
  • 5.00 gm smoked paprika
  • Pinch of cayenne pepper
  • 600g Free Range Chicken Thigh, trimmed, cut into 3-4cm pieces
  • 1 large red onion, cut into wedges
  • 1 small cos lettuce, leaves separated
  • 200g baby cucumbers (qukes), sliced lengthways
  • 100g blue cheese, crumbled
  • 4 tortillas, warmed
  • Fresh coriander leaves, to serve (optional)
  • 80ml (1/3 cup) tomato sauce
  • 40g butter
  • 10.40 gm hot chilli sauce
  • 24.40 gm Worcestershire sauce
Instructions:
  • In a large sealable plastic bag, mix together flour, paprika, cayenne, and chicken. Season generously. Seal the bag and shake vigorously to coat the chicken. Thread the coated chicken and onion onto 8 pre-soaked bamboo or metal skewers.
  • 1. Heat a chargrill pan over medium-high heat. 2. Coat skewers with oil. 3. Grill for 2-3 minutes on each side until golden and cooked through. 4. Place on a plate and cover with foil to keep warm.
  • In a small saucepan over medium heat, combine the tomato sauce, butter, and hot sauce. Stir until the butter melts. Mix in the Worcestershire sauce and simmer for 5 minutes until the sauce slightly thickens.
  • Drizzle the spicy sauce over the chicken skewers and plate with fresh lettuce, crunchy cucumber, tangy blue cheese, warmed tortillas, and zesty lemon wedges. Sprinkle with fragrant coriander to taste.
