Buffalo chicken dip-stuffed mushrooms: a crowd-pleasing appetizer for any gathering.
Ingredients:
  • 10 large mushrooms, stems and insides removed
  • 1 teaspoon olive oil, or as needed
  • 1 celery stalk, diced
  • 0.25 cup blue cheese dressing
  • 0.25 cup ranch dressing
  • 0.25 cup buffalo wing sauce
  • 2 ounces cream cheese
  • 2 cooked chicken breasts, shredded
  • 0.5 cup shredded Cheddar cheese
Instructions:
  • Preheat your oven to a toasty 350 degrees F (175 degrees C) and elegantly place the mushrooms, open-side up, in a baking dish.
  • In a small skillet over medium heat, sauté celery in olive oil until tender, for about 5 minutes. Stir in blue cheese dressing, ranch dressing, buffalo wing sauce, and cream cheese with the celery until the cream cheese melts and the buffalo sauce is smooth, approximately 5 minutes.
  • Coat chicken with buffalo sauce in a bowl, then spoon into mushrooms and top with Cheddar cheese.
  • Bake in the oven until the cheese is melted and beautifully golden, for approximately 20 minutes.
