Cheese-Stuffed Buffalo Chicken Rolls

Cheese-stuffed buffalo chicken rolls: a family favorite, easy to prep ahead for a delicious dinner.
Ingredients:
  • 4 boneless skinless chicken breasts (about 1 1/4 lb)
  • 1/4 teaspoon salt
  • 1/4 cup finely crumbled blue cheese (1 oz)
  • 1/4 cup finely shredded Cheddar cheese (1 oz)
  • 2 tablespoons Frank's™ RedHot™ Buffalo Wings Sauce
  • 1/3 cup unseasoned dry bread crumbs
  • Blue cheese dressing, if desired
  • Celery sticks, if desired
Instructions:
  • Preheat oven to 375°F and generously coat a 15 x 10 x 1-inch pan with cooking spray. Flatten each chicken breast to 1/4 inch thickness and season with salt.
  • Fill each chicken breast with a tantalizing mixture of 1 tablespoon blue cheese and 1 tablespoon Cheddar cheese. Roll the chicken over the cheese, securing the ends with toothpicks for a delicious and elegant presentation.
  • Combine the melted butter and Buffalo wing sauce in a shallow dish until thoroughly mixed. In another shallow dish, place the bread crumbs. Dip the chicken rolls in the butter mixture, then coat them with the crumbs before arranging them in a baking pan.
  • Bake until chicken is cooked through. Remove toothpicks and serve with blue cheese dressing and celery.
