Mega mozzarella-stuffed burgers

Satisfy your inner cowboy with fiery buffalo burgers, smothered in savory onion chutney and drizzled with velvety basil mayonnaise. Delicious!
Ingredients:
  • 1 red onion
  • 400 g buffalo or beef mince
  • 80 g buffalo mozzarella
  • 2 tablespoons balsamic vinegar
  • 2 slices of mortadella
  • 2 brioche buns
  • 1 large ripe tomato
  • 2 handfuls of rocket
  • 1 large free-range egg
  • 125 ml olive oil
  • 125 ml vegetable oil
  • 1 lemon
  • 1 bunch of fresh basil (30g)
Instructions:
  • - Preheat the oven to 180°C/350°F/gas 4 or heat up your barbecue. Wrap the red onion in foil and cook in the oven or coals for 2 hours until soft. - While the onions cook, make the mayo: whisk egg yolk until fluffy, gradually whisk in both oils until thick, then add lemon juice to adjust consistency. Stir in basil paste. Season with salt and more lemon juice. - Season and mix mince, divide into 4 pieces, flatten into patties. Place mozzarella on 2 patties and top with remaining 2 patties, sealing edges. - Peel and mash cooked onions, mix with balsamic vinegar. Season to taste. - Grill burgers for 8 to 10 minutes, flipping regularly. Crisp up mortadella, toast buns on BBQ, slice tomato. - Assemble burgers by spreading basil mayo on buns, add tomato, mortadella, rocket, burger, and balsamic onions. Enjoy!
