Mega veggie burgers

Tofu: flavorful, high protein, low saturated fat, rich in calcium and phosphorus for strong bones.
Ingredients:
  • 350 g firm silken tofu
  • 1 large free-range egg
  • 75 g wholemeal breadcrumbs
  • 2 heaped teaspoons Marmite
  • 8 ripe tomatoes
  • 1 tablespoon red wine vinegar
  • 2 sprigs of fresh basil
  • 4 soft wholemeal buns
  • 400 g mixed seasonal salad veg, such as cucumber, red cabbage, apples, cress, baby spinach
  • olive oil
  • 2 sprigs of fresh rosemary
  • 50 g Cheddar cheese
  • 50 g gherkins
  • 4 tablespoons natural yoghurt
  • 1 tablespoon white wine vinegar
  • 1 teaspoon Dijon mustard
  • 4 sprigs of fresh basil
  • ¼ of a fresh red chilli
Instructions:
  • Wrap the tofu in a clean tea towel and squeeze out excess liquid (about 4 tablespoons). Transfer tofu to a bowl, add the egg, breadcrumbs, and Marmite. Mix well with hands, shape into 4 patties. Cook chopped tomatoes in a pan with pepper, water, and vinegar for 10-15 minutes. Add basil and season with chili flakes if desired. Warm buns in oven. Prepare salad veggies. Blend basil with dressing ingredients until smooth. Cook tofu patties with rosemary for 3 minutes per side. Top with cheese and melt. Assemble burgers with tomato sauce and gherkins. Toss salad with dressing and serve with burgers. Enjoy the delicious meal!
