Mega veggie nachos

Avocado is not only packed with healthy fats but also rich in antioxidant vitamin E to protect cells from damage.
Ingredients:
  • 2 mixed-colour peppers
  • 1 fresh red chilli
  • 3 ripe tomatoes on the vine
  • 6 spring onions
  • 1 bunch of fresh coriander
  • 2 limes
  • extra virgin olive oil
  • 4 corn tortillas
  • ½ teaspoon cumin seeds
  • Chipotle Tabasco sauce
  • 1 x 400g tin of black beans
  • 1 ripe avocado
  • 20 g feta cheese
Instructions:
  • Preheat the oven to 180ºC/350ºF/gas 4 and heat a griddle pan on high. Cook whole peppers, chili, tomatoes, and spring onions until charred and tender. Cover peppers and chili with clingfilm and set aside. Dice tomatoes and spring onions in a bowl. Peel, deseed, and dice the peppers and chili. Mix them with tomatoes, spring onions, coriander, lime juice, and oil. Cut tortillas into wedges and bake until golden. Toast cumin seeds in a frying pan, then add Tabasco sauce and beans. Cook until thick. Slice avocado, drizzle with lime juice. In a bowl, assemble tortillas, topped with beans, salsa, avocado, feta, and coriander. Serve.
