Stuffed-Crust Pepperoni Pizza

Cheese-stuffed crust pizza for the ultimate cheesy indulgence.
Ingredients:
  • 3 cups Original Bisquick™ mix
  • 2/3 cup very hot water
  • 2 tablespoons olive or vegetable oil
  • 3/4 cup diced pepperoni
  • 4 sticks Colby-Monterey Jack string cheese (from 10-oz package), cut in half lengthwise
  • 1 can (8 oz) pizza sauce
  • 2 cups shredded Italian cheese blend (8 oz)
  • 1 cup sliced fresh mushrooms
  • 1 small green bell pepper, chopped (1/2 cup)
  • 1 can (2.25 oz) sliced ripe olives, drained
Instructions:
  • Preheat oven to 450°F with the rack in the lowest position. Grease a 12-inch pizza pan with cooking spray. In a medium bowl, mix Bisquick, hot water, and oil with a fork until a soft dough forms. Beat vigorously for 20 strokes and let it stand for 8 minutes.
  • Gently spread dough in the pizza pan, covering the bottom and extending it 1 inch over the sides. Lightly press 1/4 cup of pepperoni along the edge of the dough. Arrange string cheese over the pepperoni, making sure to overlap if needed. Fold the 1-inch edge of the dough over the cheese and pepperoni, then press to seal. Bake for 7 minutes.
  • Spread the pizza sauce on the partially baked crust, then top with 1 cup of Italian cheese, the remaining 1/2 cup of pepperoni, mushrooms, bell pepper, and olives. Finally, sprinkle the remaining 1 cup of cheese on top.
  • Continue baking for an additional 9 to 12 minutes, or until the crust turns a beautiful golden brown and the cheese is perfectly melted.
