Buffalo chicken wing flatbread: Spicy wing sauce, ranch chicken, Gorgonzola, banana peppers on crust.
Ingredients:
  • 2 tablespoons olive oil, divided
  • 1 (16 ounce) package chicken tenders, cut into small pieces
  • 0.5 (1 ounce) package ranch dressing mix
  • 1 pinch cracked black pepper to taste
  • 1 tablespoon salted butter
  • 1 shallot, thinly sliced
  • 2 flatbread pizza crusts (such as Stonefire® Artisan Flatbread)
  • 0.25 cup hot Buffalo wing sauce
  • 1 cup finely shredded mozzarella cheese
  • 0.25 cup pickled banana pepper rings
  • 0.5 cup Gorgonzola cheese crumbles
Instructions:
  • Preheat the oven to a toasty 450 degrees F (230 degrees C).
  • In a skillet over medium heat, warm 1 tablespoon of oil. Add the chicken, sprinkle with ranch dressing mix, season with cracked pepper, and cook until the center is no longer pink and the juices run clear, for about 5 to 8 minutes, stirring occasionally.
  • Simultaneously, in a separate skillet, melt butter over medium heat. Saute shallot until soft, approximately 5 minutes.
  • Brush each flatbread with the flavorful remaining olive oil, generously coat with zesty Buffalo wing sauce, and sprinkle with gooey mozzarella cheese. Layer with succulent chicken, aromatic shallots, and tangy banana pepper rings, then finish off with a sprinkle of creamy Gorgonzola cheese crumbles.
  • Place the flatbreads with cheese directly on the middle oven rack and bake until crispy, about 15 minutes. Slice them up and enjoy!
