Buffalo chicken bombs: Buttermilk biscuits filled with spicy chicken, cheese, baked until golden, topped with garlic butter and parsley. Serve with ranch or blue cheese dip.
Ingredients:
  • 1 1/2 cups shredded rotisserie chicken
  • 1/4 cup Buffalo sauce
  • 1/3 cup shredded mozzarella cheese
  • 1 can (8-count) refrigerated buttermilk biscuits
  • 2 tablespoons salted butter, melted
  • 1 tablespoon chopped fresh parsley flakes
  • 1/2 teaspoon garlic powder
  • blue cheese or ranch dressing, for dipping
Instructions:
  • Preheat the oven to 375°F (190°C).
  • Mix chicken with zesty Buffalo sauce and melty shredded mozzarella in a medium mixing bowl.
  • Flatten each biscuit to 1/8-inch thickness using a rolling pin on a clean surface. Divide the Buffalo mixture equally (about 1/4 cup per biscuit) and place in the center of each biscuit. Pinch the edges together to seal the mixture inside. Arrange the filled biscuits, seam-side down, on an ungreased baking sheet.
  • Bake in the oven until irresistibly golden brown and piping hot, approximately 15 minutes.
  • Combine melted salted butter, parsley flakes, and 1/2 teaspoon garlic powder in a bowl; generously brush over hot biscuits as soon as they are out of the oven.
  • Enjoy with blue cheese or ranch dressing on the side for dipping.
